Google Doodle’s Adobo: A Source of Filipino Pride and Identity
Adobo is considered a source of Filipino pride and identity. The mere mention of the word “Adobo” can easily make Filipinos all over the world crave the taste of home. Filipinos have been a lover of food, but nothing could compare to the taste of Adobo at home. And perhaps, tourists could vouch for that too!

- Anthony Irwin, the Google Doodle artist, shared his experience while working on the art for this historic Doodle. He ordered some southern-style chicken Adobo from a local restaurant, and the smell brought back nostalgic memories of his childhood.
- Irwin expressed that he tried to catch the childhood joy of enjoying and savoring the food that makes you feel at home. “I can claim Filipino food as a part of my culture and celebrate the connection it creates between my mother’s identity and my own,” Irwin said.

The Unique Elements of Adobo
Easily, you can cook your Adobo in your own home. Adobo is a stew made from marinated meat or vegetables and cooked with vinegar, soy sauce, garlic, bay leaves, and black pepper. The use of local flavors makes Filipino Adobo unique, as it is much sweeter, sourer, and saltier than other versions.
- Of course, you can use whatever you have in your refrigerators. May it be chicken or pork, you can make your Adobo! Splash it with a little bit of your style if you want to *wink*
- The dish has added twists depending on the regions where it’s cooked. Different areas in the Philippines offer their own Adobo variation. Some use vinegar exclusively, known as the adobong puti. While others incorporate coconut milk, seafood, or vegetables like water spinach (kangkong) and green bean (sitaw).
- Significantly, some also cook adobong kangkong or adobong sitaw, it’s healthy! Use seafood too if you have the means, squid adobo is one of the favorites! So, go ahead and experiment with Adobo all you want, no one stops you.
